Lemon Ginger Chicken Noodle Soup

A comforting bowl full of fresh flavors and hearty protein.  The added lemon & ginger make this soup the ultimate cold-kicker and immune system booster, plus they add so much flavor!


1 cup chopped carrots

1 cup chopped onion

1 cup chopped celery

3 cloves chopped garlic

Fresh grated ginger, about 1 tbsp

Zest from 1 lemon

2 tbsp olive oil

1 tsp crushed red pepper

7 cups low sodium chicken broth

1 can cannellini beans (drained and rinsed)

Juice from 1 lemon

Shredded chicken from 1 rotisserie chicken

6 cups fresh spinach, roughly chopped

1/2 box medium pasta shells

salt & pepper to taste

Sauté carrots, onion, and celery in olive oil for about 6 minutes, until veggies are softened.  Add garlic, ginger, lemon zest, and crushed red pepper.  Sauté until fragrant, about 1 minute more. 

Add chicken broth, cannellini beans, and lemon juice.  Using an immersion blender, give the soup a few good pulses to blend about 1/2 of the beans and veggies.  This will give the soup a creamier texture.  If you don't have an immersion blender, feel free to blend one can of the beans in a food processor or blender with some chicken broth before adding it to the soup.  This is an optional step - your soup will be just as delicious without blending.

Add salt and pepper to taste.  Add the shredded chicken, bring to a boil, then simmer while you cook the pasta in a separate pot.  You can absolutely cook the noodles in with the soup, but they tend to get overcooked and soggy, especially in leftovers.  I like to keep them separate until I put them in my bowl.  

Finally, add the chopped spinach to the soup.  Put desired amount of shells in a bowl and add soup.

Add more ginger!  Ginger spikes your metabolism and helps your body flush out waste.

Add even more lemon juice!

Instead of spinach, add chopped kale.  The benefits are even greater!

Add a tablespoon or two of ground turmeric in with the chicken broth.  Turmeric is a high antioxidant spice and is also great for digestion.

Add a bunch of freshly chopped parsley at the end.  Parsley has a lot of great vitamins and also helps to prevent kidney stones and bladder infections.
